Prepare the Bechamel Sauce
In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes until it turns a light golden color. Gradually whisk in the milk, ensuring there are no lumps. Cook for about 5-7 minutes until the sauce thickens. Remove from heat and stir in the Dijon mustard. Season with salt and pepper to taste.

Assemble the Sandwiches
Preheat the oven to 375°F (190°C). On a baking sheet, layer two slices of bread. Add a slice of ham and a generous amount of Gruyère cheese on top. Spread some of the Bechamel sauce over the cheese. Place the other two slices of bread on top to form sandwiches.

Toast the Sandwiches
Spread a little butter on the top of each sandwich and bake in the preheated oven for about 10-15 minutes, until golden and crispy. Remove from the oven and pour more Bechamel sauce on top of each sandwich.
