Tuna Tartare

    Prep and chill tuna

    Place the yellowfin tuna in a clean bowl and dice into small 6–8 mm cubes. Chill in the refrigerator for 10 minutes before mixing to help maintain texture.

    Marinate tuna

    In a separate bowl, whisk together lime juice, soy sauce, sesame oil, salt, and pepper. Gently toss the tuna cubes with the marinade and let sit for 5–7 minutes to lightly cure.

    Finish tartare base

    Dice the avocado and fold it into the tuna with the chopped cilantro. Gently combine without mashing the avocado. Taste and adjust salt if needed.

Green Tomato Aguachile

    Make the aguachile base

    In a blender or mortar, combine the green tomatoes, jalapeño, cilantro, lime juice, and salt. Pulse until you achieve a bright, slightly chunky sauce. If you prefer smoother, blend longer.

    Adjust consistency and flavor

    If the mixture is too thick, thin with a small amount of water or additional lime juice until you reach a sauce-like consistency. Chill until plating.

Garnish

    Prepare garnishes

    Thinly slice radishes. Cut lime into wedges. Rinse and dry microgreens or chives if using.

    Plate

    On chilled plates, use a ring mold to shape the tuna tartare. Spoon the aguachile around the tartare or create a shallow pool. Scatter radish slices over the tartare and finish with microgreens. Serve with lime wedges.
