Hummus Base

    Blend base

    In a food processor, combine the cannellini beans, tahini, lemon juice, minced garlic, cumin, and salt. Pulse until roughly combined.

    With the processor running, slowly stream in the 2 tablespoons olive oil and 2 tablespoons water or aquafaba, until the hummus is smooth and creamy. Scrape down the sides as needed.

    Taste and adjust by adding a bit more lemon juice or salt if desired.

    Stir in 2 tablespoons finely chopped fresh parsley to brighten the hummus.

Citrus Herb Oil

    In a small bowl, whisk together 4 tablespoons olive oil, lemon zest, 1 teaspoon lemon juice, 1 tablespoon chopped parsley, and 1 teaspoon chopped dill. Season with 0.25 teaspoon salt.

Crudites

    Prepare the vegetables: carrot sticks, cucumber sticks, bell pepper sticks, celery sticks, radishes, and cherry tomatoes. Keep them on a platter ready for dipping.

    Pat dry the washed vegetables if needed and arrange around a small bowl of hummus.

To Serve

    Spoon the hummus into a serving dish. Drizzle with the citrus herb oil and garnish with extra chopped parsley or dill if desired. Serve with the crudités on the side.
