Pickle Relish
Method
Crostini Base
- 1
Preheat the oven to 375°F (190°C). Slice the baguette into 1/2-inch thick pieces.
- 2
Place slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt.
- 3
Toast until golden and crisp, about 8–12 minutes, flipping halfway.
Caramelized Onions
- 4
Peel and thinly slice the onions.
- 5
In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium-low heat.
- 6
Add onions and a pinch of salt. Cook slowly, stirring frequently, until deeply caramelized and golden brown, about 25–30 minutes.
- 7
If desired, sprinkle sugar to enhance caramelization. Set aside.
Tomato Bruschetta Topping
- 8
In a bowl, combine diced tomatoes, minced garlic, and chopped basil.
- 9
Stir in olive oil, balsamic vinegar, salt, and pepper. Let flavors meld for about 10 minutes.
Pickle Relish
- 10
If using store-bought relish, fluff it and set aside. If you prefer, finely chop extra pickles and mix with a pinch of sugar.
- 11
Prepare an area for serving the relish with a small spoon or scoop.
Assemble & Serve
- 12
- 13
Top with tomato bruschetta mixture.
- 14
Finish with a small dollop of pickle relish on the side or atop for a tangy contrast.
- 15
Arrange on a platter and serve immediately. Offer extra toppings on the side if desired.
