Aguachile base

Method

Prep and gather

    Rinse green tomatoes, jalapeños, cucumber, and cilantro. Pat dry.

    Slice avocado and thinly slice radishes for serving (to be added at the end).

Prepare produce for blending

    Chop green tomatoes into chunks; dice cucumber.

    Seed jalapeños if you prefer milder heat; keep seeds for extra heat if desired.

Make the aguachile base

    In a blender or mortar and pestle, combine chopped green tomatoes, jalapeños, garlic, cilantro, lime juice, and salt.

    Blend until mostly smooth with some texture remaining.

    Add water in 1-tablespoon increments until the mixture reaches a saucy, pourable consistency.

Incorporate cucumber and chill

    Stir diced cucumber into the aguachile base.

    Taste and adjust lime juice and salt as needed.

    Refrigerate for about 10 minutes to chill and meld flavors.

Finish and serve

    Slice avocado and radishes just before serving.

    To serve, spoon aguachile onto plates or shallow bowls, top with avocado slices and radish, and arrange warmed tostadas or tortilla chips on the side.
