    Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment.

    In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

    In a separate bowl, whisk together oil, eggs, vanilla, and applesauce until smooth.

    Fold in grated carrots, pineapple (if using), and walnuts (if using) into the dry ingredients.
