Brew the Tea

In a saucepan, bring 2 cups of water to a boil. Add the Yaupon tea leaves and steep for 5 minutes. Strain and let it cool.

Mix the Ingredients

In a mixing glass, combine the cooled Yaupon tea, Peach-Tarragon honey, and lemon juice. Stir until the honey is fully dissolved.

Add Bitters

Add 2 dashes of cherry bitters to the mixture and stir gently.

Serve

Fill a glass with ice cubes, pour the tea mixture over the ice, and garnish with a lemon slice or fresh tarragon if desired.
