Burger Patties & Seasoning

    Form patties

    Divide the ground beef into a single 1/3 lb portion (0.333 lb). Gently form into a patty about 3/4" thick and slightly wider than the bun. Do not overwork the meat; handle lightly and press a shallow dimple in the center of the patty to prevent domeing during cooking.

    Season

    Evenly coat both sides of the patty with the blackening seasoning (about 1 1/2 tbs total), pressing the seasoning lightly into the meat. Sprinkle 1/4 tsp kosher salt and 1/8 tsp black pepper on both sides as well.

    Sear and cook

    Heat a cast-iron skillet or heavy pan over medium-high heat until very hot. Add 1 tsp vegetable oil and swirl to coat. Place the patty in the pan and sear 3 minutes undisturbed until a dark crust forms. Flip and cook 2.5–3 minutes for medium (adjust +/- for desired doneness). If the pan becomes smoky, lower heat slightly. During the last minute of cooking, place one slice of habanero muenster on the patty and cover the pan with a lid or foil to melt the cheese.

Bacon Jam

    Cook bacon

    While the patty rests or before cooking patties (recommended), heat a medium nonstick skillet over medium heat. Add the diced bacon and cook until fat renders and bacon is browned but not crisp, about 6–8 minutes. Use a slotted spoon to transfer most of the bacon to a paper towel-lined plate, leaving about 1–2 tbsp of bacon fat in the pan.

    Cook onion

    Add the finely diced onion to the reserved bacon fat and cook over medium-low heat, stirring frequently, until soft and translucent, about 6 minutes. If the pan looks dry, add 1 tsp water to prevent sticking.

    Combine and simmer

    Return the cooked bacon to the pan with the onions. Stir in 2 tbsp brown sugar, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, and 2 tbsp water. Bring to a gentle simmer and cook, stirring occasionally, until the mixture is thick and jam-like, about 6–8 minutes. Season with 1/8 tsp freshly ground black pepper. Taste and adjust sweetness or acidity as desired. Remove from heat and set aside; the jam will thicken more as it cools.

Cheese & Toppings

    Toast buns

    Spread 1 tsp butter on the cut faces of the bun. Toast in a clean skillet over medium heat or on a griddle until golden and slightly crisp, about 1–2 minutes per side. Remove and set aside.

    Prepare produce

    While buns toast or the patty rests, wash and dry the lettuce leaf. Slice tomato to a 1/4" thickness and have pickles ready if using.

Finish & Assembly

    Assemble burger

    Spread 1 tsp mayonnaise on the bottom bun. Place the lettuce leaf on the mayo, then the tomato slice. Set the blackened patty with melted habanero muenster on top. Spoon 1–2 tbsp of the bacon jam over the cheese (adjust to taste). Add pickles if desired. If you like extra heat, drizzle 1/2 tsp sriracha over the jam. Cap with the toasted top bun.

    Rest & serve

    Let the assembled burger rest 1 minute so juices redistribute. Serve immediately with fries or a side salad.
