    Prep beans

    Drain and rinse the canned black beans well. Transfer to a large mixing bowl and use a fork or potato masher to roughly mash the beans, leaving some whole beans and texture — aim for mostly mashed with some bits remaining (about 1–1½ minutes).

    Prepare aromatics & dry mix

    In a small skillet, lightly sauté the diced red onion with 1 teaspoon olive oil over medium heat for 2–3 minutes until softened and slightly translucent. Add the minced garlic and cook 30 seconds more. Remove from heat and allow to cool slightly. In a separate small bowl, combine breadcrumbs and pulsed oats; stir in spices (cumin, smoked paprika, coriander), salt, and pepper.

    Mix patty mixture

    Add the sautéed onion and garlic, lime juice, chopped cilantro (if using), beaten egg (or flax egg), and the breadcrumb/oat/spice mixture to the mashed beans. Stir thoroughly until evenly combined. The mixture should hold together when pressed; if too wet, add up to 2 tablespoons more breadcrumbs or oats; if too dry, add 1–2 teaspoons water or a splash of olive oil.

    Form patties

    Divide the mixture into 4 equal portions (about 5–6 ounces each). With slightly oiled hands, form each portion into a compact patty about 3½–4 inches in diameter and roughly 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to help prevent doming during cooking.

    Cook patties

    Heat a large nonstick or cast-iron skillet over medium heat and add remaining 1 tablespoon olive oil. When the oil shimmers, add patties (work in batches if needed). Cook undisturbed for 4–5 minutes until the underside is golden-brown and crisp. Carefully flip and cook 3–4 minutes more until the second side is browned and the patty feels firm and cooked through. If pan is getting too dark, reduce heat slightly. Alternatively, patties can be baked at 375°F (190°C) on a lightly oiled sheet for 12–15 minutes, flipping halfway.

Toppings & Assembly

    Toast buns

    Spread a thin layer of butter or brush oil on cut sides of the brioche buns. In a clean skillet over medium heat or on a griddle, toast the buns cut-side down for 1–2 minutes until golden and slightly crisp. Set aside.

    Prepare toppings

    Slice the tomato and avocado. Lightly season tomato and avocado slices with the 1/4 teaspoon salt. If 430 sauce is chilled, stir briefly to ensure a smooth consistency.

    Assemble burgers

    Spread about 1–2 tablespoons of 430 sauce on the bottom half of each toasted bun. Place a small handful (about 1 cup) of mixed greens on the sauce, then set a hot black bean patty on top. Add tomato slices and 3–4 avocado slices. Drizzle 1–2 teaspoons more 430 sauce on the avocado if desired. Top with the bun crown and press gently.

    Serve

    Serve burgers immediately while patties are warm and buns are crisp. Offer additional 430 sauce on the side. Leftover patties can be refrigerated for up to 3 days or frozen for up to 1 month; reheat in a skillet or oven until heated through.
