Prep artichokes
Drain canned artichoke hearts, pat dry with paper towel, and roughly chop into 1/2-inch pieces. You should have about 1 cup.

Soften and combine cheeses
Preheat oven to 375°F (190°C). In a large mixing bowl, beat the softened cream cheese with a rubber spatula or hand mixer until smooth. Add the sour cream and mayonnaise and mix until fully incorporated and creamy.

Add flavorings
Stir in the minced garlic, lemon juice, grated Parmesan (3 Tbs), 1 cup shredded mozzarella, kosher salt (1 tsp), black pepper (1 tsp), and red pepper flakes if using. Mix until evenly distributed.

Fold in vegetables
Fold the well-drained spinach and chopped artichoke hearts into the cheese mixture until evenly combined, scraping the sides and bottom of the bowl so there are no streaks.
Baking & Finishing

Transfer the combined mixture into a shallow oven-safe baking dish (about 1.5 to 2-quart capacity). Smooth the top with a spatula.

Sprinkle the additional 1/2 cup shredded mozzarella evenly over the top and then dust with 1 tablespoon grated Parmesan.

Bake in the preheated 375°F (190°C) oven until the dip is bubbly around the edges and the top is golden and slightly browned, about 20–25 minutes. If you prefer a more browned top, broil on high for 1–2 minutes, watching carefully to prevent burning.

Remove from the oven and let rest for 5 minutes. Sprinkle chopped fresh parsley over the top before serving.
To Serve

Place the hot dip on a trivet and serve with gluten-free corn tortilla chips and vegetable sticks for dipping. Provide small plates and spoons for guests to scoop.

Leftovers: Cool to room temperature, cover tightly, and refrigerate up to 3–4 days. Reheat in a 350°F (175°C) oven until warmed through, about 15–20 minutes, or microwave in 30-second bursts, stirring between intervals.
