    Prepare the salmon

    Pat the salmon fillets dry with paper towels. Check for pin bones and remove with tweezers if present. Season both sides lightly with 1/2 tsp of the salt and 1/2 tsp of the black pepper.

    Make the marinade

    In a small bowl, whisk together 2 tbs olive oil, 2 tbs fresh lemon juice, 1 tsp Dijon mustard, 1 tsp gluten-free soy sauce or tamari, 1 tsp honey (or maple syrup), 1 tsp minced garlic, 1 tsp chopped fresh dill (or 1/2 tsp dried), and 1 tsp lemon zest if using. Taste and adjust salt/pepper as desired.

    Marinate the fish

    Place the salmon fillets in a shallow dish or zip-top bag and pour about two-thirds of the marinade over them, reserving the rest for finishing. Turn the fillets to coat evenly. Let sit at room temperature for 15–20 minutes (or refrigerate up to 30–45 minutes). If refrigerated, bring back to room temperature for 15 minutes before cooking.

Cooking (Pan-sear or Grill or Oven)

    Heat a heavy skillet (preferably cast-iron) over medium-high heat until hot. Add 1 tsp olive oil and swirl to coat. Place salmon fillets skin-side down and press gently for 10 seconds to ensure even contact. Cook skin-side down without moving for 4–6 minutes, until the skin is crisp and the fish is cooked about two-thirds of the way through. Flip carefully and cook 1–2 minutes more for medium (internal temp ~125–130°F / 52–54°C) or 3–4 minutes for well-cooked (145°F / 63°C). During the last 30 seconds, brush the top with the reserved marinade to glaze.

    Option B — Grill

    Preheat grill to medium-high and oil the grates. Grill salmon skin-side down for 4–6 minutes, then flip and grill 1–3 minutes more until desired doneness. Brush with reserved marinade in the last minute and remove from heat.

    Option C — Oven (baked or broiled)

    Preheat oven to 400°F (200°C) for baking or set broiler for broiling. For baking: place salmon skin-side down on a parchment-lined baking sheet and bake 10–14 minutes depending on thickness until internal temp reaches desired doneness. For broiling: broil skin-side up 4–6 inches from heat for 5–8 minutes, brushing with reserved marinade once, until just cooked through.

Finish & Garnish

    Rest and garnish

    Let the cooked salmon rest on a plate for 2–3 minutes. Sprinkle with the 1 tbsp chopped dill or parsley and a final pinch of salt and pepper if needed. Serve with lemon wedges to squeeze over the top.

Optional Sides (if using)

    Roasted potatoes or vegetables

    If serving with baby potatoes: toss halved potatoes with 1 tbsp olive oil (or butter), 1/2 tsp salt, and pepper. Roast at 425°F (220°C) for 20–25 minutes until golden and tender. If serving a salad, dress mixed greens lightly with olive oil, lemon juice, salt and pepper and serve alongside the salmon.
