Prepare beans
Rinse the green beans and trim the stem ends. Pat them dry thoroughly with paper towels — moisture will cause oil splatter and make the batter less crisp.

Heat oil
Pour vegetable oil into a large, heavy-bottomed pot or deep skillet to a depth of about 1.5–2 inches (roughly 4–5 cm). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise immediately.

Make batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, 3/4 tsp salt, and 1/4 tsp black pepper. If using the egg, whisk it into the cold sparkling water, then add the liquid to the dry ingredients and stir just until combined. Do not overmix; a few small lumps are fine. Batter should be fairly thin but able to coat beans; adjust with a tablespoon of water if too thick.

Optional panko dredge
If using panko for extra crunch, place breadcrumbs in a shallow bowl. After dipping each battered bean, press lightly into panko to adhere. This step is optional but yields a crunchier exterior.

Fry in batches
Working in small batches (do not overcrowd), dip a handful of green beans into the batter to coat, let excess drip off, then optionally press into the panko. Carefully lower into the hot oil using a slotted spoon or spider. Fry until golden and crisp, about 2–3 minutes per batch, turning as needed for even color. Maintain oil temperature near 350°F by adjusting heat between batches.

Drain and season
Use a slotted spoon to transfer fried green beans to a wire rack set over a sheet pan or to paper towels to drain. While still hot, sprinkle with the finishing 1 tsp salt (evenly distributed over batches). Let sit 1–2 minutes so excess oil drains and coating firms.

Serve
Arrange fried green beans on a platter and serve immediately with the Chipotle Ranch Dressing for dipping.
Chipotle Ranch Dressing

In a small bowl, combine the mayonnaise and sour cream (or Greek yogurt). Whisk in the buttermilk until smooth and reaching desired dipping consistency.

Add the minced chipotle, 1 tsp adobo sauce, lime juice, minced garlic, dill, parsley, 1/4 tsp salt, 1/8 tsp black pepper, and honey if using. Taste and adjust: add more adobo for heat, more buttermilk to thin, or a pinch more salt if needed.

Cover and refrigerate for at least 15 minutes to allow the flavors to meld. Stir before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days.
