Prepare Vegetables

    Chop and Measure

    Wash and dry all produce. Core and seed the red bell pepper and cut into small dice (about 1/4-inch). If using fresh corn, remove kernels from the cob. Peel and small-dice the carrots. Halve the cherry tomatoes. Thinly slice the red onion. Roughly chop cilantro and set aside a small amount for garnish.

    If using frozen corn, thaw and pat dry. Combine the diced red pepper, corn, carrots, cherry tomatoes, and sliced red onion in a bowl and set aside at room temperature.

Make Curry Sauce

    Heat a medium saucepan over medium heat. Add butter or neutral oil and let it melt/heat until shimmering.

    Add the finely chopped yellow onion and cook, stirring occasionally, until translucent and softened, about 4–5 minutes.

    Stir in minced garlic and grated ginger and cook 30–45 seconds until fragrant, taking care not to brown them.

    Add curry powder and ground cumin to the pan. Toast the spices with the aromatics for about 30 seconds, stirring constantly to bloom the flavors.

    Stir in the tomato paste and cook 1 minute. Sprinkle in the all-purpose flour and cook, stirring, for another minute to form a light roux which will help thicken the sauce.

    Slowly whisk in the vegetable or chicken stock to avoid lumps, then bring the mixture to a gentle simmer. Cook until slightly reduced and thickened, about 4–6 minutes.

    Reduce heat to low, stir in the heavy cream or coconut milk, and season with salt and black pepper. Simmer gently 2 minutes for the sauce to become glossy and smooth. Remove from heat and stir in lime juice to brighten the flavor. Taste and adjust seasoning if needed.

Assemble Nachos

    Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with foil or parchment for easier cleanup. Spread half of the corn tortilla chips in an even layer across the sheet, overlapping slightly but maintaining some single-layer areas so chips crisp.

    Spoon about half of the warm curry sauce evenly over the chips — just enough to lightly coat and flavor them, about 1/3–1/2 cup. Scatter half of the mixed vegetable topping over the chips. Sprinkle about half of the grated habanero muenster cheese evenly on top.

    Add a second layer: top with remaining chips, then spoon remaining curry sauce in dollops across the top layer. Scatter remaining vegetable mix and finish with remaining grated cheese.

    Bake in the preheated oven until cheese is melted and bubbling and chips at the rim are golden, about 6–8 minutes. For extra browning, switch oven to broil for 1 minute—watch carefully so chips don't burn.

Finish & Serve

    Remove nachos from oven and immediately scatter chopped cilantro and optional pickled or fresh jalapeño slices over the top. Serve with lime wedges on the side for squeezing.

    Let cool 1–2 minutes (the curry sauce will be hot), then transfer to a serving platter or serve directly from the sheet. Encourage diners to scoop from edges to get chips with sauce, vegetables, and cheese in each bite.
