Wings & Marinade/Coating

    Prepare wings

    Pat the 1.5 lb bone-in chicken wings very dry with paper towels. Remove any excess skin or feather quills. Dry wings are essential for crisping.

    Season and promote crispness

    In a large bowl, combine 1 tsp kosher salt, 1 tsp freshly ground black pepper and 1 tbs aluminum-free baking powder. Add the wings and toss thoroughly so each piece is evenly coated. The baking powder raises pH and helps the skin crisp.

    Rest

    Place coated wings on a wire rack set over a rimmed baking sheet and refrigerate uncovered for 30–60 minutes if you have time. If short on time, proceed immediately.

    Cook wings (oven method)

    Preheat oven to 425°F (220°C). Arrange wings in a single layer on the wire rack/baking sheet, skin side up, leaving space between pieces. Roast 35–45 minutes, flipping once at 20–25 minutes, until skin is deep golden and internal temperature at thickest part reaches 165°F (74°C). For extra crispness, broil 2–3 minutes at the end while watching closely.

    Alternative: Frying

    Heat 2–3 inches of neutral oil in a deep pot to 350°F (175°C). Fry wings in batches 8–10 minutes until golden and cooked through. Drain on paper towels. Toss with sauce immediately (see sauce directions).

    Alternative: Air fryer

    Preheat air fryer to 400°F (200°C). Arrange wings in a single layer and cook 20–25 minutes, shaking the basket every 6–8 minutes, until crisp and cooked through.

Sauce: Hot

    In a small saucepan over low heat melt 2 tbs butter. Whisk in 1/2 cup hot sauce and 1 tsp honey until combined and slightly warm. Taste and adjust sweetness or heat. Toss freshly cooked wings in the sauce to coat evenly, then serve immediately.

Sauce: BBQ

    Warm 1/2 cup BBQ sauce with 1 tsp apple cider vinegar in a small saucepan over low heat until glossy and slightly reduced, about 2–3 minutes. Toss wings in sauce to coat; for sticky glaze, return sauced wings to a 425°F oven on the rack for 3–4 minutes to set the sauce (watch closely).

Sauce: Sweet Chili

    Combine 1/2 cup sweet chili sauce with 1 tsp fresh lime juice in a small bowl. Warm slightly if you prefer. Toss wings to coat; garnish with extra lime wedges if desired.

Sauce: Lemon Pepper

    Melt 2 tbs butter in a small pan over low heat. Stir in 1 tbs lemon juice, 1 tsp lemon zest and 1 tsp coarse ground black pepper. Remove from heat and toss wings in the lemon-pepper butter until evenly coated. Sprinkle with 1 tbs chopped fresh parsley before serving.

Sauce: Jamaican Jerk

    In a small saucepan combine 1/2 cup Jamaican jerk sauce with 1 tbs brown sugar. Warm over low heat, stirring until sugar dissolves and sauce is slightly thickened, about 2–3 minutes. Toss wings thoroughly in the sauce and serve. If using very spicy jerk sauce, start with less and add to taste.

Sauce: Garlic Parmesan

    Melt 3 tbs butter in a small skillet over medium-low heat. Add 3 minced garlic cloves and sauté 30–45 seconds until fragrant (do not brown). Remove from heat, stir in 1/4 cup freshly grated Parmesan and 1 tbs chopped parsley until saucy and slightly thickened. Toss wings in the garlic-Parmesan sauce and serve immediately; offer extra grated Parmesan at the table.

To Serve (optional)

    Arrange sauced wings on a platter with celery sticks and lime wedges. Serve with blue cheese dressing or ranch on the side for dipping.
