Make sauce
In a small bowl combine 1/4 cup mayonnaise, 2 tsp ketchup, 1 tsp yellow mustard, 1 tsp dill pickle juice, 1/4 tsp smoked paprika, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp sugar and a pinch (about 1/8 tsp) black pepper. Whisk until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the burgers so flavors meld (at least 10 minutes).

Prep toppings
Wash and dry bib lettuce leaves. Slice tomato into 1/4-inch rounds and season lightly with salt if desired. Slice pickles if not pre-sliced. Keep toppings chilled until assembly.

Form patties
Divide ground beef into two 3.5-ounce loosely packed balls (about 100 g each). Do not overwork the meat—just shape into loose balls and keep chilled until cooking.

Preheat griddle
Preheat a cast-iron skillet or flat griddle over high heat until very hot (you should see it shimmering). Add 1 tablespoon neutral oil and spread to coat the surface.

Smash and sear
Place two meat balls on the hot surface leaving space between them. Using a heavy flat spatula or a burger press lined with parchment, press each ball firmly and quickly to about 1/4-inch thickness. Season the exposed top immediately with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper (divide between both patties). Cook without moving for 2 minutes to develop a deep crust.

Flip, cheese, and finish
Use a thin spatula to scrape and flip each patty. Immediately place one slice of American cheese on each patty. Cook for another 30–45 seconds to melt the cheese and finish cooking (aim for a juicy medium; cook longer for well-done). Remove patties to a plate and let rest briefly.

Assemble burger
Spread about 1 to 1 1/2 tablespoons of 430 Sauce onto the bottom bun. Place a bib lettuce leaf on the sauce, then stack the two smash patties (cheese side up). Add 2 tomato slices and 3 pickle slices on top of the patties. Spread a thin layer of sauce on the top bun and crown the burger. Repeat assembly for the second burger.

Serve
Serve the smash burgers immediately while hot with extra pickles or fries on the side. Estimated resting before eating is minimal—enjoy right away for best texture.
