Prepare the Base

    Cook the Rice

    Rinse 1 cup of white rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Chicken

    While the rice is cooking, heat 1 tbs of olive oil in a skillet over medium-high heat. Season the chicken breast with salt and pepper to taste. Add the chicken to the skillet and cook for about 5-7 minutes on each side or until the chicken is cooked through and has a nice golden color. Once cooked, remove from heat and let it rest for a few minutes before slicing.

    Add Soy Sauce

    After the chicken has rested, slice it into strips and return it to the skillet. Add 2 tbs of soy sauce and stir to coat the chicken evenly. Cook for an additional 2 minutes to heat through.

Prepare the Vegetables

    Sauté the Vegetables

    In a separate pan, add a little olive oil and heat over medium heat. Chop the bell pepper and carrot into bite-sized pieces. Add the chopped vegetables and broccoli florets to the pan. Sauté for about 5-7 minutes or until they are tender but still crisp.

Assemble the Rice Bowl

    Combine Ingredients

    Fluff the cooked rice with a fork and divide it into serving bowls. Top with the sliced chicken, sautéed vegetables, and garnish with chopped green onions and a sprinkle of sesame seeds.
