Prepare the Base

Prepare the Rice

If not already cooked, prepare the rice according to package instructions. You will need about 2 cups of cooked rice for the bowl.

Heat the Beans

Open the can of black beans, drain and rinse them, then heat in a small saucepan over medium heat for about 5 minutes until warmed through.

Cook the Chicken

If the chicken is not already grilled, grill or pan-cook the chicken breast until fully cooked (internal temperature of 165°F/75°C), about 6-7 minutes per side. Let it rest for a few minutes, then chop into bite-sized pieces.

Make the Salsa

Combine Ingredients

In a medium bowl, combine the diced tomatoes, red onion, cilantro, lime juice, salt, and black pepper. Mix well and set aside to let the flavors meld for about 10 minutes.

Assemble the Burrito Bowl

Layer the Ingredients

In a large bowl or plate, start by adding a layer of cooked rice. Top it with the warmed black beans, grilled chicken pieces, and the prepared salsa.

Slice the avocado and arrange it on top of the bowl. Sprinkle shredded cheese and dollops of sour cream over everything.
