Combine Ingredients
In a cocktail shaker, combine the pisco, fresh lime juice, simple syrup, and egg white. Do not add ice yet.

Dry Shake
Seal the shaker and shake vigorously without ice for about 15 seconds. This helps to emulsify the egg white.

Add Ice and Shake
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled coupe or cocktail glass.

Garnish
Add a couple of dashes of Angostura bitters on top of the foam for garnish.
