Chicken Cutlet

Prepare the Chicken
Season the chicken breasts with salt and black pepper.

Coat the Chicken
Dredge each chicken breast in flour, dip into beaten eggs, and then coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat oil over medium-high heat. Fry the chicken cutlets for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Prepare the Beans
Soak pinto beans in water overnight. Drain and rinse before cooking.

Combine Ingredients
Add chopped tomato, chopped cilantro, sliced jalapeño, soaked beans, and chicken broth. Season with salt.

Simmer the Beans
Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are tender. Stir occasionally.

Add Bacon
Once the beans are cooked, stir in the crispy bacon pieces.
Green Salsa

Mix the Sauce
In a bowl, combine mayonnaise and lemon juice. Mix well until smooth.

Slice the telera rolls in half and lightly toast if desired.

Cut the torta in half and serve with extra green salsa on the side.
