Prepare the Filling

Mix Ingredients
In a medium bowl, combine the cooked chicken or carnitas, shredded cheese, and enchilada sauce. Mix well until all ingredients are evenly coated.
Assemble the Taquitos

Warm Tortillas
In a skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, until they are pliable.

Fill and Roll
Take one warm tortilla and place about 2 tablespoons of the filling mixture at one end. Roll tightly and place seam-side down on a plate. Repeat with remaining tortillas and filling.
Cook the Taquitos

Fry the Taquitos
In a large skillet, heat enough oil to cover the bottom over medium-high heat. Once hot, carefully add the taquitos, seam-side down. Fry for about 2-3 minutes on each side, until golden brown and crispy.
Serve the Taquitos

Garnish and Serve
Remove taquitos from the skillet and place them on a paper towel-lined plate to drain excess oil. Top with crema, crumbled Cotija cheese, and chopped chives. Serve immediately with extra enchilada sauce on the side.
