Prepare the Filling
In a mixing bowl, combine Alejandro cheese, half of the enchilada sauce, and chopped chives. Mix well until all ingredients are evenly incorporated.

Prepare the Tortillas
Heat a skillet over medium heat. Warm each corn tortilla for about 10-15 seconds on each side until they are soft and pliable. This will prevent them from cracking when you roll them.
Assembly and Cooking

Fill the Tortillas
Take a warmed tortilla and add about 2 tablespoons of the cheese filling to the center. Roll the tortilla tightly around the filling and place it seam-side down on a baking sheet. Repeat with the remaining tortillas.

Bake the Taquitos
Preheat the oven to 400°F (200°C). Brush the tops of the taquitos with a little oil and bake for 15-20 minutes or until golden and crispy.

Serve the Taquitos
Once baked, remove the taquitos from the oven and let them cool slightly. Serve with the remaining enchilada sauce, crema, and sprinkle with cotija cheese and additional chives on top. You can also add optional toppings like sour cream, guacamole, and salsa.
