Roasting the Peppers
Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for about 20 minutes or until the skins are blistered and charred. Turn them occasionally for even cooking.

In a large skillet over medium heat, add the ground beef and chorizo. Cook until browned, breaking up the meat with a spatula, for about 8-10 minutes. Drain excess fat.

Stir in the Alejandro cheese until well combined with the meat mixture.

Stuffing the Peppers
Once the poblano peppers are roasted, remove them from the oven and let them cool slightly. Carefully peel off the charred skin and make a slit down the side of each pepper, removing seeds if desired. Stuff each pepper with the meat and cheese filling.

Baking the Stuffed Peppers
Place the stuffed peppers in a baking dish and pour the enchilada sauce over the top. Bake in the preheated oven for 15-20 minutes until heated through and cheese is melted.
