    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.

    Chop the Vegetables

    While the quinoa is cooking, chop the carrots, zucchini, and bell peppers into bite-sized pieces. Halve the cherry tomatoes.

    Prepare the Herbs

    Rinse the fresh basil leaves and chop them coarsely. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped carrots, zucchini, and bell peppers to the skillet. Cook for 5-7 minutes, stirring occasionally until the vegetables are tender.
