Caramelize the Onion
Slice the large onion thinly. In a skillet over medium heat, add 1 tablespoon of oil. Once hot, add the onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes or until the onions are soft and caramelized. Remove from heat and set aside.

Prepare the Poblano
Roast the poblano pepper over an open flame or under a broiler until the skin is charred. Place it in a bowl and cover with plastic wrap to steam for about 10 minutes. Peel the skin off, remove the seeds, and chop finely.

Chop Chipotle
Finely chop the chipotle peppers from the adobo sauce, adjusting the quantity to taste based on your spice preference.

Melt the Cheese
In a saucepan over medium-low heat, combine the sharp cheddar cheese and Alejandro cheese. Stir continuously until the cheese is melted and smooth.

Combine Ingredients
Once the cheese is melted, add the caramelized onions, chopped poblano, and chipotle peppers to the cheese mixture. Stir to combine.

Add Sherry
Pour in the tablespoon of sherry and stir well. Continue to cook for an additional 2-3 minutes until everything is well mixed and heated through.

Transfer the queso to a serving bowl and serve hot with tortilla chips for dipping.
