Method

Pollo Verde

    Prepare the Chicken

    In a bowl, mix the chicken thighs with olive oil, salt, and black pepper. Marinate for at least 30 minutes.

    Cook the Chicken

    Heat a skillet over medium-high heat. Cook the marinated chicken for about 6-8 minutes on each side until fully cooked.

    Add Salsa

    Once the chicken is cooked, pour the green salsa over it and let it simmer for an additional 5 minutes.

    Garnish

    Remove from heat, sprinkle chopped cilantro on top and drizzle lime juice before serving.

Al Pastor

    Prepare the Pork

    In a bowl, combine the pork shoulder with adobo sauce, minced garlic, diced onion, cumin, and salt. Mix well and marinate for at least 1 hour.

    Cook the Pork

    Heat a large skillet over medium heat. Add the marinated pork and cook for about 10-15 minutes until browned.

    Add Pineapple

    Add diced pineapple to the skillet and cook for an additional 5 minutes, allowing the flavors to meld.

Short Rib

    Prepare the Ribs

    Season short ribs with salt and black pepper. Heat a large pot over medium-high heat and sear the ribs on all sides.

    Add Vegetables

    Remove the ribs and add onion and carrot to the pot. Sauté for a few minutes.

    Slow Cook

    Return the ribs to the pot, add beef broth and bay leaves. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until tender.

Carnitas

    Prepare the Pork

    In a slow cooker, combine the pork butt with orange juice, lime juice, cumin, minced garlic, and salt.

    Slow Cook

    Cover and cook on low for 6-8 hours until the pork is tender and easily shredded.

    Shred and Serve

    Remove the pork from the cooker, shred with forks, and serve with your favorite toppings.

Rajas - VG

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced poblano peppers and onion, sauté until soft.

    Add Cheese

    Once the vegetables are soft, add cream cheese and shredded cheese. Stir until melted and combined.

  3. 16

    Season and Serve

    Add salt to taste, mix well, and serve warm as a filling or side.
