    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Add lime juice, salt, diced tomato, diced onion, and chopped cilantro to the bowl with the avocado. Mash the mixture with a fork until combined but still chunky.

    Taste and Adjust

    Taste the guacamole and adjust salt or lime juice as needed. Set aside.

    Prepare Mini Empanadas

    If using frozen empanadas, follow the package instructions to bake or fry them until golden brown. If making from scratch, prepare the dough and filling, then shape and cook.

    To prepare the quesadillas, heat a skillet over medium heat. Place cheese between two tortillas and cook until the cheese melts and the tortillas are golden brown, flipping once. Cut into wedges to serve.
