Method

Guacamole

    Prepare Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash Avocado

    Add lime juice and salt to the bowl, and mash using a fork or potato masher until desired consistency is reached.

    Mix Ingredients

    Fold in diced tomatoes, red onion, and cilantro. If desired, finely chop the jalapeño and add to the mix.

Smoky Queso

    Melt Cheese

    In a medium saucepan over medium heat, combine cream cheese, milk, and cheddar cheese. Stir until melted and smooth.

    Add Seasonings

    Add smoked paprika, diced green chilies, salt, and black pepper. Stir until well combined and heated through.

    Serve

    Serve warm with tortilla chips.

Salsa Roja

    Blend Ingredients

    In a blender, combine ripe tomatoes, red onion, cilantro, jalapeño, lime juice, and salt.

    Blend until smooth or to desired consistency.

    Taste and adjust seasoning if necessary.

Salsa Verde

    Cook Tomatillos

    Remove the husks from the tomatillos and rinse them. Boil them in water for about 5-7 minutes until soft.

    In a blender, combine cooked tomatillos, cilantro, jalapeño, lime juice, and salt.

    Blend until smooth and adjust seasoning if needed.

Salsa Amarillo

    In a blender, combine the yellow bell pepper, cilantro, jalapeño, lime juice, and salt.

    Blend until smooth and taste to adjust seasoning.

Fresh Tortilla Chips

    Heat Oil

    Heat vegetable oil in a deep skillet over medium-high heat.

    Fry Tortillas

    Cut corn tortillas into triangles and fry in batches until golden brown and crispy, about 2-3 minutes.

    Drain and Season

    Remove chips with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
