Prepare the Peppers
Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.

Mix the Filling
In a large bowl, combine cooked rice, black beans, half of the jack cheese, cumin, salt, and black pepper. Mix well.

Stuff the Peppers
Stuff each bell pepper with the rice and bean mixture, packing it down slightly. Place the stuffed peppers upright in a baking dish.

Bake
Drizzle olive oil over the stuffed peppers and cover the dish with aluminum foil. Bake for 25 minutes. Remove the foil, sprinkle the remaining jack cheese on top, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool slightly. Top with shredded lettuce, pico de gallo, and guacamole before serving.
