    Prepare the Filling

    In a mixing bowl, combine the cooked white rice, black beans, shredded cabbage, and half of the cotija cheese. Add salt and black pepper to taste. Mix well until all ingredients are evenly incorporated.

    Stuff the Shrimp

    Carefully make a slit in the back of each shrimp to create a pocket. Stuff each shrimp with the rice and bean filling, pressing gently to secure the filling.

    Cook the Shrimp

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Place the stuffed shrimp in the skillet and cook for about 3-4 minutes on each side, or until the shrimp are cooked through and opaque.

    Serve

    Remove the skillet from heat. Drizzle the baja sauce over the stuffed shrimp and sprinkle with the remaining cotija cheese. Serve immediately.
