Enchiladas
Method
Preparation
- 1
Prepare the Filling
In a bowl, combine the cooked shredded chicken and refried beans. Mix well to incorporate.
- 2
Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, add a few tablespoons of the chicken and bean mixture, and sprinkle some shredded cheese. Roll up the tortilla and place it seam-side down in a baking dish. Repeat for all tortillas.
- 3
Add Sauce
Pour your choice of red or green sauce over the assembled enchiladas, ensuring they are evenly coated. Top with remaining shredded cheese.
- 4
Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- 5
Serve
Remove from the oven, let cool slightly, and serve hot with your choice of toppings such as sour cream, diced onions, or cilantro.
