Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Tortillas
In a skillet, warm the corn tortillas over medium heat until they are pliable, about 30 seconds on each side.

Fill the Tortillas
Spread a tablespoon of refried beans on each tortilla, followed by a generous amount of shredded cheese and either shredded chicken or beef. Roll the tortillas tightly and place them seam-side down in a greased baking dish.

Add Enchilada Sauce
Pour the enchilada sauce evenly over the rolled tortillas. Make sure they are well covered.

Top with Cheese
Sprinkle the remaining shredded cheese on top of the enchiladas.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes. Serve topped with sour cream, chopped cilantro, sliced olives, and chopped green onions if desired.
