Prepare the Chicken
Preheat your grill or skillet over medium-high heat. Rub the chicken breasts with olive oil and season generously with blackening seasoning, salt, and pepper.

Cook the Chicken
Place the seasoned chicken breasts on the grill or skillet and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Prepare the Filling
In a bowl, combine the cooked rice, black beans, and shredded cabbage. Mix well to combine.

Stuff the Chicken
Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Carefully slice a pocket into each chicken breast and stuff with the rice and bean mixture.

Add Toppings
Drizzle Baja sauce over the stuffed chicken and top with crumbled cotija cheese.

Serve the blackened chicken warm with additional Baja sauce on the side if desired.
