Method
House-made Sour (make ahead or fresh)

Combine and mix
Measure fresh lime juice and lemon juice into a measuring cup or small pitcher. Add simple syrup and a pinch of fine salt.

Optional egg white (for texture)
If using, add one fresh egg white to the citrus and syrup. Dry-shake (no ice) vigorously in a cocktail shaker for 10–15 seconds to emulsify and create foam.

Chill
If you used the egg white, add a few ice cubes and shake briefly (5–7 seconds) to cool, then strain into a container. If not using egg white, stir or gently shake with ice to chill and then strain. Store the sour in the refrigerator up to 3 days.
Assembling the Margarita Spritzer

Prepare glass: optionally run a lime wedge around the rim of a Collins or highball glass and dip the rim into coarse salt or Tajín to coat. Fill the glass with ice cubes (about 1 cup).

Build the cocktail: in a cocktail shaker filled with ice, add 2 oz blanco tequila, 1 oz house-made sour, and 0.5 oz orange liqueur. Shake vigorously for 8–10 seconds until well chilled.

Strain and top: double-strain or fine-strain the chilled mixture into the prepared glass over the ice. Top with about 2 oz club soda or sparkling water to give the spritzer bubbles. Gently stir once to integrate.

Garnish and serve: garnish with a lime wheel or an orange twist. Serve immediately with a straw or stirrer.

Notes: adjust effervescence by adding more or less club soda. For a lighter cocktail keep tequila at 1.5 oz and increase soda to 3–4 oz. If you made the sour ahead, shake briefly with ice before assembling to re-chill.
