Method
Make the Bloody Mary Mix
Combine base liquids
In a large pitcher or bowl, pour 6 cups tomato juice, 1/2 cup fresh lemon juice and 1/4 cup fresh lime juice. Stir gently to combine.
Season and spice
Add 4 tablespoons Worcestershire sauce, 2 tablespoons prepared horseradish (plus the optional extra tablespoon if you prefer more heat), 1 tablespoon hot sauce, 1 teaspoon smoked paprika, 1 teaspoon celery salt, 1/2 teaspoon coarse black pepper and 1 teaspoon fine sea salt. Whisk until the horseradish is fully incorporated and there are no clumps.
Adjust savory balance
Stir in 2 tablespoons olive brine or pickle juice if using — this adds a savory, briny depth. Taste the mix and adjust acidity, spice, or salt: add more lemon/lime for brightness, hot sauce or extra horseradish for heat, or a pinch more salt if muted.
Chill and marry flavors
Cover the pitcher and refrigerate for at least 1 hour (ideally 2–4 hours) to let flavors meld. If short on time, add 2 cups of ice to the mix and stir for 1–2 minutes to chill, then strain out ice before using.
Make-ahead and storage
The mix will keep, refrigerated in a sealed container, for up to 5 days. Stir or shake before each use. If separation occurs, a quick whisk will reincorporate solids.
Prepare Tajín Spiced Rim
On a small plate combine 2 tablespoons Tajín and 1 teaspoon coarse kosher salt. Moisten the rim of each glass by rubbing a lime wedge around the edge. Invert the wet rim into the Tajín-salt mixture and twist to coat evenly. Tap off excess.
Assemble Each Cocktail (per serving)
Fill a rimmed highball glass or pint glass with ice.
Pour 2 oz vodka or silver tequila over the ice.
Top with 6 oz (about 3/4 cup) Bloody Mary mix. Stir gently 4–6 times to incorporate alcohol and mix.
Garnish: add 1 celery stalk and 2 seasonal garnishes of your choice (for example: 2 olives on a pick, a cherry tomato and a lime wheel, a pickled green bean, or a cooked shrimp). Finish with a light grind of black pepper if desired.
