House-made Citrus Sour (makes ~8 oz, ~4 cocktails)

House-made Citrus Sour

Juice fruits and combine
Measure and strain fresh lime juice (3 oz) and fresh lemon juice (1 oz) into a mixing container to remove pulp and seeds.

Add simple syrup
Add 4 oz of 1:1 simple syrup to the strained citrus juices. Stir to combine.

Adjust and rest
Taste the sour: it should be bright, balanced and slightly sweet. If too tart, add up to 1 tsp cold water or an additional 1/2 oz simple syrup. If using egg white, refrigerate briefly or keep chilled until ready to use. This recipe yields about 8 oz of citrus sour (roughly 4 cocktails at 1 oz each).

Prepare glass
If salting the rim, rub the lime wedge around the rim of a rocks or coupe glass. Dip the rim into coarse salt to coat. Set the glass aside.

Combine ingredients
In a cocktail shaker, add 2 oz Altos Plata tequila, 1 oz triple sec, and 1 oz house-made citrus sour. Add a handful of ice (about 1 cup) to the shaker.

Shake
Shake vigorously for 12–15 seconds until the shaker is cold and, if egg white was included in the sour, a frothy head is visible.

Strain and serve
Double-strain the cocktail into the prepared glass over fresh ice (or serve neat in a coupe if preferred). Use a fine mesh strainer if egg white was used to remove any small solids.

Garnish
Garnish with the lime wedge on the rim or expressed over the drink and dropped in. Serve immediately.
