Make cucumber puree
Peel 4–5 inches of English cucumber (or one small/medium cucumber), roughly chop and place in a blender with 1/2 oz of water. Blend on high until smooth. If you prefer a smoother texture, strain puree through a fine-mesh sieve or chinois into a bowl, pressing with the back of a spoon to extract about 1 oz of bright green cucumber puree. Reserve pulp or discard.
Build and shake
Add 2 oz Effen Cucumber vodka, 1/2 oz Aperol, 1/2 oz fresh lemon juice, 1/2 oz fresh lime juice, 1/2 oz simple syrup, and 1 oz cucumber puree into a cocktail shaker. Fill the shaker with ice (about 1 cup). Cap and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is well-chilled and slightly frothy.
Strain
Double-strain the cocktail into a chilled coupe or rocks glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and cucumber solids. If you prefer a longer drink, pour over fresh ice in a rocks glass.
Top (optional)
If you want a lighter, slightly effervescent finish, top the drink with about 1 oz club soda. Gently stir once to incorporate. This step is optional — the cocktail is balanced without soda.
Garnish and serve
Garnish with a thin cucumber slice laid on the rim or floated on the surface and a lime wheel. Serve immediately.
