Soup Base

    Prepare aromatics and palm nut purée

    Heat a heavy saucepan over medium heat. Add the fresh palm oil and let it warm gently for 1 minute until it becomes fluid and glossy but not smoking.

    Add chopped onion, minced garlic and ginger to the warmed palm oil. Sauté for 3–4 minutes until soft and fragrant.

    Stir in the chopped tomatoes and cook 6–8 minutes until they break down and the mixture becomes saucy and slightly reduced.

    Add the crushed cooked palm nut purée (graine) to the pot and stir thoroughly to combine. Fry the mixture 4–5 minutes so the palm nut purée integrates with the palm oil and tomato base. You should see the mixture thicken slightly and develop a deeper orange-red color.

    Pour in the beef or chicken stock slowly while stirring to loosen the mixture. Bring to a gentle simmer.

    Add the whole scotch bonnet (pierced once so it releases heat but can remain intact for milder heat), dried smoked shrimp or flaked smoked fish, ground crayfish (if using), and half a bouillon cube. Stir to combine.

    Season with salt and black pepper. Reduce heat to low and simmer gently for 12–15 minutes to allow flavors to meld and the soup to slightly thicken. Stir occasionally to prevent sticking.

Protein & Vegetables

    While the soup simmers, ensure your proteins are pre-cooked and chopped into bite-sized pieces (boiled beef, smoked turkey, stockfish). Add these to the pot and simmer 5–7 minutes to heat through and let them absorb the palm oil flavors.

    Stir in the washed and chopped greens (spinach, ugu, or bitter leaf). Cook 2–3 minutes until wilted but still bright. Taste and adjust seasoning, adding up to the remaining half bouillon cube or additional salt if needed.

    If using ugba or smoked bitter leaf, stir it in now and simmer 1–2 minutes. Remove and discard the scotch bonnet pepper if you prefer less heat.

    Optional: Halve the hard-boiled egg and place in the serving bowl as a garnish or stir gently into the soup.

Optional Side - White Rice

    Rinse the rice under cold water until the rinse runs clear to remove surface starch.

    In a small saucepan bring 1.5 cups water to a boil. Add the rinsed rice, salt and vegetable oil, stir once and return to a gentle boil.

    Lower heat to a simmer, cover tightly and cook 15–18 minutes until rice is tender and water is absorbed. Turn off heat and let rest covered 5 minutes, then fluff with a fork.

    Serve a scoop of rice alongside or under a ladle of the palm oil soup.
