Okra Stew
Prepare okra
Rinse the fresh okra, pat dry, and trim the stems. Slice into 1/4-inch rounds. If you prefer less mucilage (sliminess), cut lengthwise or briefly soak in vinegar water (1 tbs vinegar per cup) then rinse.
Build stew base
Stir in tomato paste and chopped tomato; cook 3–4 minutes until the tomato softens. Add optional chopped scotch bonnet and cook 1 minute. Pour in 1 cup stock or water, crumble in the bouillon cube (if using), add salt, pepper and ground crayfish. Bring to a gentle simmer.
Add okra
Add the sliced okra to the simmering sauce. Stir well to combine. Simmer uncovered 8–10 minutes, stirring occasionally, until okra is tender and the sauce thickens slightly. If the stew is too slimy for your preference, cook a few minutes longer uncovered to evaporate extra liquid or add 1 tsp groundnuts/powdered peanut to help thicken.
Finish
Stir in chopped basil or spinach, adjust seasoning to taste, and remove from heat. Keep warm until ready to serve.
Protein (chicken / beef / fish)
Season the protein: Pat chicken, beef or fish dry. Toss with 0.5 tsp salt, 0.25 tsp black pepper and 1 tbs lemon juice. Let rest 10–15 minutes.
Sear or cook protein: Heat 1 tbs oil in a skillet over medium-high heat. For chicken thighs: sear 4–5 minutes per side until golden and cooked through (internal temp 165°F / 74°C). For beef chunks: brown on all sides then simmer in 1/2 cup stock until tender, about 20–30 minutes depending on cut. For fish fillets: sear 2–3 minutes per side until opaque and cooked through. Remove and set aside.
Combine with okra stew: Add the cooked protein to the okra stew in the skillet for the last 3–4 minutes of simmering to marry flavors. Spoon stew over protein when serving.
Peanut Stew (Groundnut Soup)
Add tomato and spice: Stir in 1 tbs tomato paste and optional scotch bonnet, cook 1–2 minutes. Gradually whisk in 1 cup roasted peanut butter until smooth.
Simmer: Slowly pour in 3 cups stock while whisking to avoid lumps. Bring to a gentle simmer, reduce heat and cook 10–12 minutes, stirring occasionally so it doesn’t stick. If too thick, add a little water to reach desired consistency.
Season and finish: Add 1 tsp salt, 1/2 tsp black pepper and 1 tbs lime juice. Taste and adjust seasoning. If serving alongside okra and protein, keep warm.
Fufu / Placali or Rice
Instant fufu / placali
Boil 2 cups water in a pot. Remove from heat and gradually whisk in 1.5 cups instant fufu flour, stirring vigorously until smooth and lump-free. Return to low heat and stir for 2–3 minutes until it thickens and becomes elastic. Cover and keep warm, or shape into balls for serving.
Garnish & Serve
Plate: Place a portion of fufu/placali or rice on the plate. Spoon okra stew with the chosen protein alongside or on top. Add a ladle of peanut stew on the side or in a separate bowl for dipping.
Garnish: Sprinkle chopped parsley or scallions and serve with lime wedges. Serve hot.
