Prepare and marinate fillets
Pat the tilapia fillets dry with paper towels. In a shallow dish combine 2 tbs olive oil, 2 tbs lemon juice, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp salt, and 1/2 tsp black pepper. Brush or spoon the marinade over both sides of each fillet and let rest 10–15 minutes at room temperature (or up to 30 minutes refrigerated).
Grill or fry - options
For grilling: Preheat grill or grill pan to medium-high (about 400°F / 200°C). Oil the grates lightly. Place fillets skin-side down (if skin-on) and grill 3–4 minutes per side until opaque and flaky. For frying: If using the optional breading, mix flour, cornstarch, 1/2 tsp paprika, and 1/2 tsp salt. Dredge marinated fillets in the dry mix, shaking off excess. Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until shimmering. Fry fillets 2–3 minutes per side until golden and cooked through (internal temperature ~145°F / 63°C). Transfer to a plate lined with paper towels to drain.
Optional Breading for Frying
Combine 3 tbs all-purpose flour, 1 tbs cornstarch, 1/2 tsp paprika, and 1/2 tsp salt in a shallow bowl. Pat marinated fillets dry and press each into the mixture so they have an even coating before frying. Reserve oil for heating in skillet.
Tomato Sauce with Seasoned Onions and Fresh Tomato
Prepare vegetables
Thinly slice the yellow onion. Mince the garlic cloves. Dice the fresh tomato into small pieces.
Cook sauce
Heat 1 tbs extra virgin olive oil in a medium skillet over medium heat. Add the sliced onion and a pinch of salt; sauté 5–7 minutes until softened and beginning to caramelize. Add the minced garlic and cook 30–45 seconds until fragrant. Stir in the canned crushed tomatoes and diced fresh tomato. Add 1 tsp dried oregano, 1/4 tsp red pepper flakes, 3/4 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer and cook 8–10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld. Taste and adjust seasoning. Stir in torn fresh basil leaves if using, then remove from heat.
Finish and serve
Keep sauce warm while fish is cooking. Spoon warm tomato sauce over plated tilapia or serve on the side.
Optional Side - Quick Sautéed Vegetables
Garnish and plating
Arrange tilapia fillets on plates, spoon tomato sauce over or alongside each fillet, add the optional sautéed vegetables if desired, garnish with chopped parsley and a lemon wedge. Serve immediately.
