Protein & Prep

    Prepare protein

    Rinse the chicken, beef, or fish under cold water. Pat dry. Rub with 1.5 tsp salt, 0.5 tsp black pepper and 2 tbs lime/lemon juice. For beef or chicken, let sit 15–30 minutes. If using fish, marinate lightly and keep chilled until ready to add.

    Par-cook protein

    If using beef: in a large pot, add beef and 400 ml water, bring to a simmer, cover and cook 35–45 minutes until tender; reserve broth and remove beef, keeping broth. If using chicken: simmer chicken in 400 ml water 20–30 minutes until cooked through; reserve broth and set chicken aside. If using fish: skip long simmer; fish will be added near the end to avoid breaking apart.

Make the Palm Oil Soup Base

    Heat palm oil

    In a deep, heavy-bottomed pot or Dutch oven, gently heat 0.75 cup red palm oil over medium heat until warm but not smoking, about 1–2 minutes. Palm oil melts quickly; keep heat moderate.

    Soften aromatics

    Add the chopped onion to the warm palm oil and sauté 4–5 minutes until translucent. Add the minced garlic and grated fresh ginger and cook 1–2 minutes until fragrant, stirring so they do not burn.

    Add tomatoes and pepper

    Stir in the chopped fresh tomatoes (or canned) and the scotch bonnet (whole if you want milder heat, pierced; chopped if you want it hot). Cook 6–8 minutes, breaking down tomatoes with the back of a spoon until they begin to reduce.

    Tomato paste and spices

    Mix in 2 tbs tomato paste and 1 tsp ginger powder (if using). Cook 2–3 minutes to remove raw tomato paste taste, stirring constantly so it blends into the oil.

    Add bouillon and ground flavorings

    Crumble in 1 bouillon cube, add 2 tbs ground crayfish (if using) and 0.5 tsp ground uziza/black pepper. Stir to combine. Pour in the reserved stock from cooking the protein (if available) and top up with additional water to reach approximately 800 ml total liquid. Bring mixture to a gentle simmer.

    Simmer the soup

    Reduce heat and simmer the palm-oil-tomato base 15–20 minutes, uncovered, stirring occasionally. Taste and adjust salt (start with 1 tsp) and pepper. The oil will separate slightly and form a rich reddish soup.

Finish with Protein & Herbs

    Return protein to soup

    If using beef or chicken: add the cooked pieces back into the simmering soup and simmer 8–10 minutes so flavors meld. If using fish: gently add fish pieces now and simmer 6–8 minutes, watching carefully so fish does not flake apart.

    Adjust seasoning and add herbs

    Taste and adjust salt and heat. Stir in 0.5 cup chopped basil or scent leaves and simmer 1–2 minutes. Remove whole scotch bonnet if it was added whole and you prefer less heat.

Cook Rice (To Serve)

    Rinse and cook rice

    Rinse 2 cups long-grain rice under cold water until water runs clear. In a saucepan combine rinsed rice with 3.5 cups water and a pinch of salt. Bring to a boil, reduce to low, cover and cook 15–18 minutes until water is absorbed. Remove from heat and let rest 5 minutes, then fluff with fork.

    Prepare pineapple

    Slice 1 cup fresh pineapple into wedges or bite-sized pieces. Chill briefly if desired. Pineapple is served on the side to add a fresh, sweet contrast to the spicy palm-oil soup.

    Alternative: serve with fufu

    If serving with fufu instead of rice, prepare 4 servings of instant or fresh fufu according to package or traditional method and keep warm.

Serve

    Ladle the hot Graine Ginger palm-oil soup into bowls over a scoop of rice or alongside a portion of fufu. Garnish with extra chopped basil or a pineapple wedge on the side. Serve immediately.
