Fried tuna fish with Attieké and fresh onions and tomato

Tuna and Marinade

    Prepare and marinate tuna

    Pat the tuna steaks dry with paper towels. In a bowl combine 3 tbs lime juice, minced garlic, grated ginger, minced hot pepper, 2 tbs soy sauce, 2 tbs vegetable oil, 1 tsp salt and 1 tsp black pepper. Place the tuna in the marinade and coat both sides. Cover and refrigerate 20–30 minutes (no more than 45 minutes) to allow flavors to penetrate.

Coating and Frying

    Prepare dredge

    While tuna marinates, whisk together 1 cup all-purpose flour, 0.25 cup cornstarch, 1 tsp smoked paprika, 0.5 tsp dry thyme, 0.5 tsp salt and 0.5 tsp black pepper in a shallow plate or tray.

    Heat oil

    Pour about 1 cup vegetable oil into a heavy skillet or frying pan (enough to shallow-fry) and heat over medium-high until shimmering and a small pinch of flour sizzles on contact (about 350°F / 175°C).

    Dredge and fry tuna

    Remove tuna from marinade and let excess drip off. Dredge each steak lightly in the flour mixture, shaking off excess. Place tuna in the hot oil and fry 2–3 minutes per side for a golden, crisp crust while the center remains slightly pink (adjust time to desired doneness; thicker steaks may need 4 minutes per side). Avoid overcrowding; fry in batches if needed. Transfer cooked tuna to a wire rack or paper towels to drain and rest 2–3 minutes.

Attiéké (side)

    Reheat and season attiéké

    If using pre-cooked attiéké that needs warming, place 4 cups attiéké in a bowl, sprinkle 0.25 cup water evenly over it and cover. Microwave 1–2 minutes or steam briefly until warmed through, then fluff with a fork. Stir in 0.25 tsp salt and 1 tsp vegetable oil or melted butter to loosen and season. Taste and adjust seasoning.

    Optional light toasting

    For a slight nutty aroma, you can heat a dry skillet over medium and toss warmed attiéké for 1–2 minutes while stirring, then remove from heat and keep covered until serving.

Fresh Onion & Tomato Salad (Garnish)

    Assemble salad

    Thinly slice 2 tomatoes and 1 red onion. Place in a bowl with 2 tbs chopped parsley or cilantro. Add 1 tbs fresh lime juice, 1 tsp olive oil, 0.25 tsp salt and 0.25 tsp black pepper. Toss gently and let sit 5–10 minutes so flavors meld. If you want milder onion flavor, rinse the sliced onion briefly in cold water and drain before tossing.

Finishing & Serving

    Plate and serve

    Divide the warm attiéké among 4 plates. Place a fried tuna steak on each portion. Spoon the fresh onion and tomato salad alongside or on top as preferred. Garnish with lemon or lime wedges and offer fresh chili or hot sauce on the side. Squeeze citrus over the fish just before eating.
