Crepe Batter

    Combine dry ingredients

    In a medium bowl, whisk together 1 cup all-purpose flour, 1 tsp granulated sugar and a pinch of salt until evenly combined.

    Whisk wet ingredients

    In a separate bowl or large measuring cup, beat 2 large eggs with 1 cup milk, 1 tablespoon water, 1 teaspoon vanilla extract (if using) and 2 tablespoons melted unsalted butter until smooth.

    Make the batter

    Gradually pour the wet mixture into the dry ingredients while whisking constantly to avoid lumps. Whisk until the batter is smooth and pourable. If there are small lumps, strain batter through a fine sieve or blend briefly.

    Let the batter rest for 15–30 minutes at room temperature to relax the gluten and produce more tender crepes. If short on time, you may proceed immediately.

Cooking Crepes

    Preheat and prep pan

    Heat a 9–10 inch nonstick skillet or crepe pan over medium heat until hot. Lightly brush or wipe the surface with a little of the 1 teaspoon unsalted butter.

    Cook crepes

    Stir the batter gently. Pour about 1/4 cup (adjust slightly for pan size) of batter into the center of the hot pan, immediately tilt and swirl the pan to spread the batter into a thin, even circle. Cook for 30–60 seconds until the edges lift and the underside is lightly golden. Use a spatula to flip and cook the second side for 15–30 seconds. Transfer cooked crepe to a plate and keep warm. Repeat with remaining batter, re-buttering the pan sparingly as needed. Expect about 8 crepes.

Assembly & Serve

    Warm the Nutella

    Spoon desired amount of Nutella (approximately 1 tablespoon per crepe for a light layer, 2 tablespoons for a richer filling) into a small microwave-safe bowl and warm for 10–15 seconds or until slightly softened and spreadable. Stir to smooth. Alternatively, place the jar in a bowl of warm water for a few minutes.

    Fill the crepes

    Place a warm crepe on a flat surface or plate. Spread 1–2 tablespoons of warmed Nutella evenly over half of the crepe, leaving a small border. Add optional banana slices or berries over the Nutella if desired.

    Fold and finish

    Fold the crepe in half over the filling, then fold in half again into a triangle (or roll). Repeat for remaining crepes.

    Serve

    Dust with powdered sugar if desired and serve immediately while warm. Offer extra Nutella on the side for dipping.
