    Make the batter

    In a medium bowl, whisk 1 cup flour and 1/4 tsp salt. Add 2 eggs and whisk, then slowly whisk in 1 cup milk and 1/4 cup water until smooth. Whisk in 2 tbs melted butter. Let batter rest 15–30 minutes at room temperature (or refrigerate up to 2 hours).

    Cook crêpes

    Heat a 8-10 inch nonstick skillet over medium heat and coat lightly with vegetable oil or butter. Pour about 1/4 cup batter into the pan, immediately tilt and swirl to coat the bottom thinly. Cook 1–1.5 minutes until edges lift and underside is lightly golden, flip with a spatula and cook 20–30 seconds more. Transfer to a plate and keep warm; repeat with remaining batter (about 6–8 crêpes total).

Grilled Chicken

    Prepare and grill

    Pound chicken breasts to even thickness (about 3/4 inch) or slice in half horizontally. Rub with 1 tbs olive oil and season with 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp garlic powder and 1/2 tsp Italian seasoning. Preheat grill or grill pan to medium-high (about 400°F / 200°C). Grill chicken 4–6 minutes per side, until internal temperature reaches 165°F (74°C) and juices run clear. Remove and let rest 5 minutes, then slice thinly across the grain.

Alfredo Sauce

    Start the sauce

    In a medium saucepan over medium heat melt 3 tbs butter. Add minced garlic and sauté 30–45 seconds until fragrant (do not brown). Sprinkle 1 tbs flour over the butter and garlic, whisk continuously for 1 minute to form a roux.

    Finish the sauce

    Slowly whisk in 1 cup whole milk and 1/2 cup heavy cream, whisking to remove lumps. Bring to a gentle simmer, stirring frequently until slightly thickened (2–4 minutes). Reduce heat to low and whisk in 1 cup grated Parmesan until smooth. Season with 1/4 tsp salt, 1/4 tsp black pepper and 1/8 tsp nutmeg if using. Keep warm on very low heat, stirring occasionally. Taste and adjust seasoning.

Assembly & Garnish

    Assemble crêpes

    Lay a warm crêpe flat. Spoon about 2–3 tbs Alfredo sauce in the center, add 2–3 slices of grilled chicken, sprinkle ~1–2 tbs shredded mozzarella or extra Parmesan, and fold the crêpe (fold in half or roll). Repeat with remaining crêpes.

    Melt and garnish

    If you prefer the cheese melted on top, place assembled crêpes on a baking sheet, spoon an extra tablespoon of sauce over each, sprinkle with the shredded cheese and broil 1–2 minutes until cheese melts and edges bubble (watch carefully). Garnish with chopped parsley and serve with optional lemon wedge.
