Method

Preparing the Steak

  1. 1

    Season the Steak

Rub the ribeye steaks with olive oil, salt, and black pepper on both sides.

  2. 2

    Grill the Steak

Preheat the grill to high heat. Place the steaks on the grill and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove and let rest for 5 minutes before slicing.

Making French Fries

  1. 3

    Prep the Potatoes

Peel the russet potatoes and cut them into thin strips for fries.

  2. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 5

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches. Fry for about 3-4 minutes until golden brown. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

Making the Pepper Sauce

  1. 6

    Cook the Shallots

In a saucepan, melt the butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

  2. 7

    Add Peppercorns

Add the black peppercorns to the pan and sauté for another minute.

  3. 8

    Combine with Broth

Pour in the beef broth and bring to a simmer. Allow it to reduce by half.

  4. 9

    Finish the Sauce

Stir in the heavy cream and cook for an additional 2 minutes until thickened. Season with salt to taste.
