Soup Preparation

    Sauté Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook slowly, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

    Add Garlic

    Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce by half.

    Combine Broth and Herbs

    Add the beef broth, thyme, bay leaves, salt, and pepper. Bring to a simmer and cook uncovered for 30 minutes to let the flavors meld.

    Remove Bay Leaves

    After 30 minutes, remove the bay leaves and adjust seasoning if necessary.

Crostini Preparation

    Prepare Baguette

    Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch slices and place on a baking sheet.

    Season Crostini

    Brush each slice with olive oil and sprinkle with garlic powder.

    Bake Crostini

    Bake in the preheated oven for about 10-12 minutes, or until the crostini are golden and crisp.

Assembly

    Serve Soup

    Ladle the hot onion soup into bowls. Top each bowl with a generous amount of grated Gruyere cheese.

    Place a few crostini on top of the cheese or serve them on the side for dipping.
