    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add the oil and mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add water, a little at a time, and knead the mixture into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Filling

    Cook the Spices

    In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add cumin seeds and sauté for a minute until fragrant.

    Add Onions and Spices

    Add the chopped onion and sauté until golden brown. Stir in ginger and green chilies, and cook for another 2 minutes.

    Mix in Vegetables

    Add the mashed potatoes, peas, garam masala, coriander powder, and salt. Mix well and cook for 5 minutes, stirring occasionally.

    Finish the Filling

    Remove the mixture from heat and stir in lemon juice and chopped cilantro. Allow the filling to cool.

Assembling and Frying

    Roll out the Dough

    Divide the dough into equal portions and roll each portion into a ball. Roll out each ball into a thin oval shape.

    Form the Samosas

    Cut the oval in half. Take one half, form a cone by folding it over, and seal the edge with a little water. Fill the cone with the vegetable filling and seal the open edge by pressing firmly.

    Heat Oil for Frying

    In a deep frying pan, heat the oil over medium heat until hot (about 350°F or 175°C).

    Fry the Samosas

    Carefully drop the samosas into the hot oil, a few at a time, and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
