Clean the Mussels
Rinse the PEI mussels under cold water to remove any debris or sand. Discard any mussels that are open and do not close when tapped.
Cooking the Broth

Add Garlic
Stir in the minced garlic and cook for an additional minute until fragrant.

Add Wine and Dijon
Pour in the white wine and add the Dijon mustard, stirring well to combine. Bring the mixture to a simmer.

Add Saffron and Citrus
Add the pinch of saffron threads and the citrus zest to the broth. Season with salt and black pepper to taste.
Cooking the Mussels

Cook Mussels
Once the broth is simmering, add the cleaned PEI mussels to the pot. Cover with a lid and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

Garnish and Serve
Remove the pot from heat. Stir in the chopped fresh parsley. Serve the mussels in bowls with the broth ladled over them.
