Panna Cotta Base

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 4 tablespoons of water. Let it sit for about 5 minutes until it blooms.

Heat the Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and sugar. Stir until the sugar is dissolved, and the mixture is hot but not boiling.

Add Gelatin
Remove the saucepan from heat and add the bloomed gelatin and vanilla extract. Stir until the gelatin is completely dissolved.

Pour into Molds
Pour the mixture into individual serving molds or cups. Allow them to cool for a few minutes, then refrigerate for at least 4 hours or until set.

Blend the Coulis
Remove from heat and let cool slightly. Use a blender or immersion blender to puree the mixture until smooth. Strain through a fine mesh sieve if desired to remove seeds.

Cool the Coulis
Let the coulis cool completely before serving with the panna cotta.
