Prepare the Mussels

Clean the Mussels
Rinse the fresh mussels under cold water and scrub the shells to remove any dirt or debris. Remove any beards (the fibrous threads) that are attached to the mussels.

Add Saffron and Wine
Stir in the saffron threads and Chablis wine. Bring the mixture to a simmer, allowing the saffron to infuse into the wine for about 2 minutes.

Cook the Mussels
Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.

Season and Garnish
Season with salt and black pepper to taste. Stir in chopped fresh parsley before serving.
Prepare the Fries

Cut the Potatoes
Peel the potatoes and cut them into thin strips (about 1/4 inch thick) to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Drain and Season
Remove the fries from the oil and drain them on a paper towel. Season with sea salt to taste while they are still hot.
