Combine the Olives
In a large mixing bowl, combine the green olives, black olives, and Kalamata olives. Stir gently to mix the varieties together.

In a separate bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, chopped rosemary, chopped thyme, chili flakes, black peppercorns, sea salt, and lemon zest until well combined.

Pour the marinade over the mixed olives in the first bowl. Toss the olives gently with the marinade to ensure they are evenly coated.

Cover the bowl with plastic wrap or transfer the olives and marinade to an airtight container. Refrigerate for at least 2 hours to allow the flavors to meld, preferably overnight for best results.
